It Was a Sunday
My Sunday started with a 5:45 alarm. After briefly questioning my sanity, I got up and ready for a run. It’s still really warm here, so if I want to do a long run I have to get out early. I had a great trail run! I did grumble about the heat at the very end, but overall it was just what I needed. Back home for breakfast, blog reading, napping, and football watching. Last week Suzanne wrote about being an introvert, and I’m right there with her. This is my ideal Sunday- after my run, I just want to be home on my couch. At halftime I made the dough for these cookies, which have been making the rounds of the blogger world. I put the dough in the fridge and after the game (yay Dolphins!) I baked them… I know what you’re thinking: “These do not look like the Fall Chocolate Chip Spiced Cookies!” I made a few substitutions, first to make them vegan (with vegan butter and a flax egg) and then I used white chocolate chips because that’s what I had (and my daughter is partial to those.) I also made them smaller than the recipe said. They smelled delicious while they were baking, and my daughter and husband loved them. Highly recommend! Sunday is the one night where I actually cook a nice dinner, and tonight I made pumpkin baked ziti. This recipe has a lot of steps, so I don’t make it often, but it’s so worth it when I do. I froze a portion for my son (who will be home on Saturday and requires a tremendous amount of food) and we have leftovers for tomorrow, which makes me VERY HAPPY. Leftovers on a Monday night are the best. Now there’s that shift, where the relaxing Sunday turns into getting ready for the week ahead… sigh. But that’s okay- I had my day to rest, relax, and run.
