Reading and Eating

It’s been a while! Yes, I’ve still been eating, but for the most part I couldn’t tell you what. I did redeem myself last night when I made this recipe for Sheet Pan Veggie Shawarma, which I read about on Suzanne’s blog. Wow, this was good! I added tofu, served it over brown rice, and garnished with basil and cashews. Finally- I made a dinner that everyone enjoyed. I also made these chickpea flour pancakes. I want the author of this recipe to come to my house and help me make them, because her photo on the website looks like this: I followed the recipe exactly and mine looked like this: Anyway, they tasted decent. Chickpea flour pancakes will never taste like regular pancakes, but that’s okay. READING! I finally finished this book: It’s really hard to talk about it without giving away plot points from the first two books of the trilogy. Let’s just say it’s about the fragility of our solar system, four dimensional space, the key to humanity’s survival encrypted in three fairy tales, and so much more. I mean… I just want to live in this book forever and ever… but it’s over. Sob! NOW what?? Well, I have to plow ahead- I have a stack of Christmas books to read. What are you reading now?
