It’s been a while! Yes, I’ve still been eating, but for the most part I couldn’t tell you what. I did redeem myself last night when I made this recipe for Sheet Pan Veggie Shawarma, which I read about on Suzanne’s blog.
Wow, this was good! I added tofu, served it over brown rice, and garnished with basil and cashews. Finally- I made a dinner that everyone enjoyed.
I also made these chickpea flour pancakes. I want the author of this recipe to come to my house and help me make them, because her photo on the website looks like this:

I followed the recipe exactly and mine looked like this:

Anyway, they tasted decent. Chickpea flour pancakes will never taste like regular pancakes, but that’s okay.
READING! I finally finished this book:
It’s really hard to talk about it without giving away plot points from the first two books of the trilogy. Let’s just say it’s about the fragility of our solar system, four dimensional space, the key to humanity’s survival encrypted in three fairy tales, and so much more. I mean… I just want to live in this book forever and ever… but it’s over. Sob! NOW what?? Well, I have to plow ahead- I have a stack of Christmas books to read.

The shwarma looks really good! I would have added tofu as well.
I haven’t really thought about cooking since I got back, and we’re living off the bounty of our freezer. At some point I’ll get inspired…or not.
I’m almost done with Annie Bot. It’s very readable and it makes you think, that’s for sure. I need more time to work out my feelings about it though.
Hmmm! Sounds like a complicated book. And- I definitely recommend this meal! It was pretty easy, too.
Oooooh the sheet pan shawarma looks really good! I need to try more sheet pan meals because they’re so easy.
I just got the book Fixing Your Feet which is what it sounds like! My feet have been my weakness in my ultras so far and the reason why I dropped at mile 52 of my 100K, so I’m excited to learn more about what I can do to strengthen them for future races and adventures!
Ooh! My feet have been okay lately but I’ve had a lot of problems in the past. I’m going to look at that book.
I can’t wait to hear what you think about Jonathan Strange and Mr. Norrell! Yay Christmas books! I finally just got God of the Woods from the library (such a long hold list, haha sigh) and am diving in tonight! We have been kind of boring with dinners because of how crazy our schedules have been, but I did make a falafel burger type thing in the air fryer this week that made my night (if not everyone else’s haha).
Mmm, a falafel burger sounds good to me!!! And- I decided not to read Jonathan Strange yet because I’m trying to only read one really long book per month- but I do want to read it soon.
I think your pancakes needed more liquid. I’ve found that using different flours gives me a very different result if I don’t adjust liquids accordingly. I go by eye rather than trusting the recipe. I’ve been burnt too many times! I’m not sure why my ingredients don’t act like the chefs’ do in their recipes.
I just finished “the nature of disappearing”, which has a twist that surprised me. Now I’m back to comfort reading the Murderbot Diaries.
Okay, that makes sense. I’ll make them again with more liquid and report back!
I have not done any cooking since Sunday when I made a veggie-packed marinara (which Phil and Taco love and Paul refuses to eat because he can detect the tiny blitzed onions, carrots and celery).
I finished Ghosts which is a book about dating jerks in your 30s which I could sadly relate to. It was really well written but I would only recommend it to people who dated in their late 20s/early 30s. Now I am reading “Pageboy” which is a memoir by Elliot Page about their transgendered experience. He was the star in Juno before transitioning. It is really good.
Well, I did date in my early 30s- maybe I would like that book. And, it’s funny how kids can detect the smallest amount of vegetables in things (how do they do that???) It’s frustrating.
I’m reading two so-so books, but really I’m focusing on somehow getting ahead with my CBBC posts because I have a busy weekend planned. It is possible the snow will derail my busy plans, but let’s think optimistically that I will not have time to devote to crafting a beautiful CBBC post this weekend, so I need to do it now!
Okay, my fingers are crossed for you- busy weekend, no snow.

The shawarma looks delish, and the tofu was a shrewd addition. I’m all for extra protein. The chickpea pancakes are a mystery though–why do they look so different in color?!

I’m doing a couple of rereads this week – I reread The Husband’s Secret (five stars!) and now I’m on to The Burgess Boys, which historically was my least favourite Strout but after reading Tell Me Everything I thought I’d give it another chance. I’m glad I am, because it’s better than I remembered. But maybe it’s because of the extra character work that came from Tell Me Everything. God, if only I could write like Elizabeth Strout. She is a gift to the literary world!
I’m not a huge fan of pancakes, no matter what the flour. I mean, I’d eat them if that was my one option, but I wouldn’t choose them.
I’ve never read any Elizabeth Strout, but that’s one of my 2025 reading goals.

I have the Three-Body problem on my too read list, but I like I need to move it up the list. I watched the netflix series and loved that. Was the Slow Horses made into a TV series, we recently watched it and enjoyed it.
Now I want to know what the deal is with the two different pancake photos. That made me laugh out loud. I’m reading the Blue Castle, but I just finished Go As a River. I really liked it. I decided to make something that I haven’t made in awhile, so I made a chicken, potato, parmesan cheese thing in the crockpot. Really yummy. I’ve been eating some sort of Keto (I think) cereal called Catalina Crunch. That’s been my go-to when I want a snack.

I’m staying with two different friends. Healthy eating at the first since she wants to lose weight. Not at the second.
I’m making chicken tortilla soup for my big Crockpot meal this week. We’re getting a slight cold front this week (highs in the low 60s at the end of the week – woop!) so I thought a warm soup would be good.
I’m reading a lot of books right now! I’m really enjoying The Blue Castle, though. I may have to buy a physical copy to reread it at another point in time because it’s such a cozy, comfort read!
