It Was a Sunday

My Sunday started with a 5:45 alarm. After briefly questioning my sanity, I got up and ready for a run.  It’s still really warm here, so if I want to do a long run I have to get out early.

I had a great trail run!  I did grumble about the heat at the very end, but overall it was just what I needed.

Back home for breakfast, blog reading, napping, and football watching.  Last week Suzanne wrote about being an introvert, and I’m right there with her.  This is my ideal Sunday- after my run, I just want to be home on my couch.

At halftime I made the dough for these cookies, which have been making the rounds of the blogger world.  I put the dough in the fridge and after the game (yay Dolphins!) I baked them…

I know what you’re thinking: “These do not look like the Fall Chocolate Chip Spiced Cookies!”  I made a few substitutions, first to make them vegan (with vegan butter and a flax egg) and then I used white chocolate chips because that’s what I had (and my daughter is partial to those.) I also made them smaller than the recipe said.  They smelled delicious while they were baking, and my daughter and husband loved them.  Highly recommend!

Sunday is the one night where I actually cook a nice dinner, and tonight I made pumpkin baked ziti.  This recipe has a lot of steps, so I don’t make it often, but it’s so worth it when I do.

I froze a portion for my son (who will be home on Saturday and requires a tremendous amount of food) and we have leftovers for tomorrow, which makes me VERY HAPPY.  Leftovers on a Monday night are the best.

Now there’s that shift, where the relaxing Sunday turns into getting ready for the week ahead… sigh.  But that’s okay- I had my day to rest, relax, and run.  I’m ready for another week.

  1. After reading your Saturday post, I’m so glad you managed this trail run! Sounds like it was just what you needed!

    We had a very simple Sunday meal of tacos, but on Saturday we had a beautiful roast with the family to celebrate my sister’s birthday.

    1. I can’t believe how many people are making and loving these cookies. I’ll be making them again with dark chocolate chips.

  2. I’m so glad I read Nicole’s comment because I’m going to make those cookies again and someone gave me FOUR dark chocolate bars – I’m not a huge fan of dark chocolate on it’s own and I was wondering how it would be with dark chocolate. Next batch, I’m going to give it a whirl…
    I’m also an introvert, so my idea of a perfect afternoon is to just stay in by myself and putter around the house/read/take a nap. Often this doesn’t happen because my kids are old enough/extroverted enough we usually do something as a family. Oh well! It’s still fun and I do get a lot of down time compared to many – I just crave SO much alone time which isn’t reasonable given my stage in life.

    Yay for the long trail run. It sounds wonderful. I’ve been cooped up with sick kids this week and my body is getting so restless. Aside from my short outside daily walks (where I just do loops in the neighbourhood because the kids have been home), I’ve done no exercise. I just haven’t been able to bring myself to use the treadmill (DEMERIT to me!). Tomorrow I’m hoping everyone is back to school and I’m going to do a long walk or run by myself!

    1. I’ll bet the cookies are amazing with dark chocolate! I’ll be making them again this weekend.
      I crave alone time so much, when I first had my son I had the thought “Wait! Maybe this wasn’t a good idea!” It’s hard being a mom and an introvert. My daughter is actually an extreme extrovert, so that makes it even harder. My son is more like me, although he calls himself an “ambivert.”

  3. I’ve made those cookies twice. Once I made the 4 ounce balls (so big!) and once I made 2 ounce balls (still pretty big). I used GF flour and they turned out great, so it seems like a recipe that’s very forgiving of substitutions.

    We spent Sunday afternoon having Hannah act as an unofficial therapy dog for our friend with cancer who is undergoing radiation. We brought him the (2 ounce) cookies, played Farkle with him and his parents, and let Hannah do her dog job. It was a nice way to spend the afternoon.

    1. That does sound nice! I think I’ll make these again with regular chocolate chips, as a thank-you gift for the mother of my daughter’s friend (why does that sound so confusing?) She’s taking the girls out this weekend and I was trying to think of what to give her. Cookies!

  4. Now I feel like I should make these cookies, especially since NGS said using GF flour worked, but I do not have the self control you have and would eat far too many! But I do like to make a cookie around the holidays so maybe I will make these!

    The first half of Sunday was nice. The boys slept until 6:15, then I ran and took them to the zoo. But post-nap the clock stood still. Our toddler is going through a rough stage of tantrums/screaming/etc. So the afternoon/evening felt pretty endless… And ideal day would probably be a day alone in my house but I am never alone in my house and not working! But I love to just be able to putz around, nap, read a book, etc.

    1. Just to clarify… the only reason I have self-control is that I don’t eat any. If I just ate one it would be all over- I would keep eating until I literally felt ill. This is the only way it works for me… and I really did enjoy the amazing aroma while they were baking.

  5. Oooh I bet white chocolate chips would be great in those cookies! I initially wanted to try them with cinnamon chips but my husband couldn’t find any at the store. I wonder if they would be good or if it would be spice overload?

    Yay for a perfect Sunday! I had a nice quiet Sunday but my football team got absolutely embarrassed so that was a bummer. Thanks for the shoutout 😊

    1. I think cinnamon chips would be amazing. I know Elisabeth wanted to double the amount of cinnamon… so I don’t think using cinnamon chips would be spice overload.

  6. I did have a nice Sunday. We went on an afternoon walk and there was almost no grumbling from our 11 year old (the 14 year old is not a complainer but little brother is). The weather was glorious and I almost finished the calendar for the grandparents for Christmas.

    1. Ha ha… your 14-year-old is not a complainer? Mine sure is! Well- she turns 14 next month and complaining is one of her current hobbies.

    It hasn’t happened lately because of Sunday races.

    I do like to hike by myself!!

    And if the weather does not cooperate, make soups & stews that last for many meals.

    And knit in front of the fireplace.

  8. I am really intrigued by these cookies, now that everyone and their mother has made them by now! I am not a huge fan of spiced cookies, though, so they may not be for me. But I’m glad everyone else is loving them!

    A Sunday with a Dolphins win is always a great Sunday. YAY!

    1. Yes! The Dolphins are doing great!!!
      I don’t think these cookies are too heavily spiced, because Elisabeth was talking about doubling the spices. They still might be too spicy for you though.
