Pumpkin-y Updates

So now we’re well into Pumpkin Palooza! How are things going, anyway?

WELL.  I’m a little bummed that my foot issue has flared up again.  I saw the doctor today and he agreed that it’s time for an MRI.  I can’t wait to confirm once and for all that my foot is officially mangled.

But other than that, I’ve been enjoying some pumpkin-y treats this month.  In addition to pumpkin pancakes and waffles, I’ve been making this pumpkin oatmeal, based loosely on a recipe from Minimalist Baker...

Yum.

But I don’t only make pumpkin-y breakfasts!  I made this pumpkin chili…

Garnished with cashew sour cream and avocado!

You know how people go apple picking in the fall?  Well, we go avocado picking.  This avocado was from our neighbor’s tree.

Then there was this deliciousness:

I can explain…

Whoever said “a picture is worth a thousand words” was definitely not talking about this picture.  Unfortunately, an absolutely hideous picture of the most delicious meal.  Let’s try the words instead: Pumpkin Pasta Bake with Almond Ricotta.  Pasta and spinach are baked with a creamy pumpkin sauce and almond ricotta “cheese.”  I loved this!  I’m a sucker for creamy pasta dishes.

I also made the Healthy Pumpkin Oat Cookies from Running on Real Food.  These are definitely on the healthy side, but that didn’t stop me from scarfing them down happily.  I pretty much love all cookies.

Don’t forget to use my trick of doubling the pumpkin spice and adding a pinch of cloves!

And while we’re on the subject of running and food… I want to give a huge shoutout to Bianca from Vegan Crunk!  I’ve been reading her blog for years, and she just completed her first 50k!!!  This is a woman who is into running, vegan foods and healthy living- but just in case that sounds too serious, I promise you she knows how to have a good time.  You can read her fun race recap here.

While people up north are enjoying some fall weather, it’s still summer here.  But that’s okay!  I need it to be warm because I’m back in the pool for some pool running.  In another month or so it will be too cold for this-

Better get with it, foot!

Oh boy- I read an intense book this week! Birchwood Pie recommended this, and I don’t know whether to thank her or demand an apology.

  1. I enjoy baking, but don’t do much with pumpkin other than pie, bread, or bars (none of which are very healthy, but all taste delish). Your delicacies all sound good, though 🙂 I hope your MRI doesn’t reveal your foot is too mangled and you’ll be able to come up with a plan of action to get things healed.

    1. Yes, I think I’ll finally be able to come up with a plan of action once I know what’s going on.
      Maybe you need a nice loaf of pumpkin bread this weekend!

  2. I love baking but with the reno, I’ve done nothing of the kind for a good long time. I’m thinking of making cookies in my new oven for the workmen. They’ve been here so long I feel like they’re my friends!
    One of my BRFs has a broken plantar plate in her foot. She keeps on trucking, mostly walking marathons. I’m not quite sure how she does it. Fingers and toes crossed your foot heals up!

    1. Ack! A broken plantar plate sounds horrible. Well… that’s why I’m getting the MRI. I’ll never know what’s really going on otherwise.

  3. I usually hold off on pumpkin until October, but also had one of my favorite baked pumpkin oatmeal dishes recently. I forgot how good it is. I definitely get more into cooking as the weather cools off. Have a great weekend

  4. We went to get some apples last weekend and I’m going to bake an apple crisp this weekend. I’m more of an apple person than a pumpkin or squash person. You certainly are making the most of it!

    Hopefully you can have your MRI sooner rather than later–just knowing what’s going on inside your foot would certainly be helpful!

  5. Not into baking but into pumpkin everything – I’ve bought pumpkin oatmeal and pumpkin latte and even added pumpkin to chili.

    I do like to bake apple pies but not with the current kitchen situation.

    Ugh on the foot… Hope the mRI shows something that can be fixed.

    1. Yes, I guess you can’t do much baking right now even if you wanted to! If you have a Trader Joes near you, you should go- they’ve got a ton of pumpkin things right now.
