Thanksgiving Recap

Ah, it was a nice day! I got up fairly early for a run, had some breakfast and blog reading time, and then got to work! I made the rolls (recipe from Nora Cooks)

Gah- I could eat this whole pan.

… and I made the tofu (also from Nora), and made the components for the salad. Then I turned the kitchen over to my son and husband- they made the stuffing and mashed potatoes while I relaxed for a little on the couch.

Then more cooking (put the Gardein roast in the oven) and trying to get everything hot at the same time… and then we ate!

Not shown- cranberry sauce that I put on the table at the last minute!

The salad is the Fall Bliss Salad that Julie recently shared. It was really good, except- I DEFINITELY bought some plant-base goat cheese specifically for this salad, and I couldn’t find it!!! I’m still a little bitter about that- but it didn’t ruin the meal. Here’s a photo my son took of his plate:

I had about 1/3 this amount of food!

After dinner we usually take a walk, but it was raining so instead we watched A Charlie Brown Thanksgiving. Charlotte came out and joined us in the living room.

Ahoy, Matey!

I know… her eye looks terrible. She’s been great about taking her thyroid meds and her fish oil, but we have trouble getting the eyedrops in her eye. We really have to be better about that.

And then it was time for pie!

Ha ha… I texted a photo to my sister, and my BIL said my pie looks “scary.” I had trouble getting the first piece out of the pan, and it kind of fell apart. But it tasted great! My second piece (I get two pieces since it’s gluten and sugar free, RIGHT?) held together perfectly. I really liked it, but no one else in my family wanted to try it. Perfect! More for me.

It was a really great day, And, great news- my son was supposed to fly back on Saturday, but there’s a winter storm warning in Chicago that day, and the airline offered to change his flight for free. So now he’s staying till Sunday, hooray!

Do you like pumpkin pie?- I like it once a year. And yes, I plan to eat my whole pie!

  1. I LOVE pumpkin pie. LOVE. IT. I never had it as a kid, so it’s been an acquired taste in adulthood and I am here for it. Your holiday spread looks delicious!

    That is such wonderful news about Paul’s extended visit. Hooray. One time a winter storm works to your advantage.

    1. Yes, we’re probably the only ones happy about this storm!
      I’m working today, but already looking forward to my traditional “Black Friday post-work” piece of pie.

    We had a really great holiday! I started the day with a 10k ‘race’ – I did not race it, I just went steady the whole time but was 3 minutes faster than last year (let’s not talk about my pre-kids paces though!!). Then we went to my brother where we ate at 1 and watched football. I barely saw the boys because they hung with their cousins in the basement who are ages 14-20. Paul cried when we had to leave. He’s so obsessed with his cousin who is a senior in high school. It’s very heartwarming to see how good my older nephews are with my boys. My brother swears they truly enjoy being around my kids and aren’t just ‘being nice’.

    I don’t love pumpkin pie but enjoy the filling my mom makes for me every year. She makes one ramekin and that is all I need. This year she made an entire chocolate pie with a GF crust she bought and sent it home with me. Gah. I do not need a whole pie to myself!! But I can freeze it and eat it slowly over the coming month.

    1. Ugh- if I start thinking about my pre-kids paces- or honestly, my paces from ten years ago- I’ll start crying. So I don’t think about it, lol.
      Won’t anyone else in your family eat that chocolate pie? I’m sure it’s delicious!

  3. I ran a 10k but still ate way too much food. In addition to turkey and all the trimmings, there was eggplant parm and lasagna (they’re Italian).

    I do like pumpkin pie but as you said, just once a year.

    1. Well- I’m pretty sure just about everyone ate too much yesterday! At least you started the day off right.
      We have lasagna for Christmas dinner.

  4. That’s awesome that Paul gets to stay for an extra day! Your TG feast looks epic.

    I don’t want to cause any trouble, but your daughter is correct about what pie should look like.

    For some reason I decided to make apple pie bars instead of apple pie, and they were good, but I feel like the holiday calls for pie. Next year I’ll do an apple pie and a chocolate chip cookie cake.

    1. Yeah, our pecan pie was good (I mean, I didn’t have any but the family liked it) BUT they were wishing for an apple pie. We’ll probably make one for Christmas!

    I only made ONE pie this year — a new apple pie recipe — but made a batch of pecan bars instead of pecan pie but then forgot to put them out.

    Love your “day time pajamas” — looks like I need to find some “airport pajamas” for my next trip. 😉

    1. Yes you do need airport pajamas!!! Or I would call them “sweatpants.”
      Sounds like you’ll have some leftover pecan bars this weekend!

  6. I would eat any of those pies!!! Looks so fun and cozy . And yes what was up with our weather? There was crashing thunder in Miami Beach and then we ended up driving up 95 in torrential rain!! (And then this morning was super cool so I guess it was a front coming in!)

    1. Yes, it was a weird Thanksgiving. And then this morning it was 53 degrees! I wish this weather would stay, but it warms up again right away.

  7. I hate the Where’s that thing I bought issue. It always makes me wonder if I left it at the store. And it never got bagged.

    My SIL once left a gf dairy free egg free pie (or something?) in our fridge when I hosted and we tasted it and we were scarred by how gross it was. I do like pumpkin pie but would not be my fav choice dessert. My SIL made pumpkin spice muffins and they tasted fine but were so under baked that I declined to take any home with me. Our fat was interesting but the food was good.

    1. Honestly I think the biggest problem with my pumpkin pie is the crust, which is gf. But it doesn’t ruin the pie (for me, at least). Yes, I still haven’t found that cheese- did I leave it at the store? Will we find it underneath something in the fridge 6 months from now???

  8. Pumpkin pie is fine. There are so many other, better pies, though. Yesterday the options were French silk (gross – I do not want a giant wad of chocolate, thank you very much) and pumpkin pie. Next year I might bring apple or pecan because those the best pies and we were celebrating the #1 food holiday with substandard pie types, you know? I did not voice my displeasure at the pie choices, but next year I might just bring one. Maybe I’ll make a pecan pie with a GF crust. I’ll say it’s to make sure my husband and his sister have a chance to have a pie, but only you and I (and your readers) will know the truth.

    1. Yes, you should absolutely do that. Although… I do think french silk pie is good (from what I remember- haven’t had one in ages.)

  9. Such a lovely Thanksgiving, and your spread looks amazing! My mom makes all the side dishes for our meal vegan so my sister and I can eat them (she’s not vegan but she’s dairy free so it’s just easier), so I had stuffing, cranberry sauce from Trader Joe’s, sweet potatoes made with bourbon and carmelized pecans and asparagus. I’m not a huge fan of fake meats so I don’t do any type of vegan roast but tofu would have been a good option! And I also don’t really love pumpkin pie but my mom made pumpkin pecan bars that were really good!

    I ran 5 miles on the trails in the morning and later we played cornhole in the backyard which was fun even though most of us aren’t great at it. The weather was basically perfect, in the mid 70s with some clouds! I feel bad for everyone who got stuck with awful weather for Thanksgiving, but glad in your case because it means your son gets to stay an extra day!

  10. What a lovely Thanksgiving, Jenny. Your feast looks amazing! I am not a fan of pumpkin pie, but I have eaten it on occasion. I approve of all the whipped cream on your daughter’s piece of pie 🙂

  11. My stepdad made the whole Thanksgiving feast and did not want help! So my mom and I were ladies-in-waiting, relaxing on the couch while he got dinner ready. How nice! It was a good holiday.

    You can ALWAYS have two pieces of pie, just saying!
