Reading and Eating

It’s been a while since I’ve done one of these! Mostly because my meals got so, so boring- mostly salads for dinner. Now that I’m eating more of a variety, I can share some more interesting meals. Like, these roasted veggie enchiladas from Nora Cooks. They were so good- and the black bean sauce was spicy and delicious. I would make that sauce and put it on other things as well.

And here’s a photo of what I call my “loaded oatmeal.” Oats with pumpkin puree, a scoop of protein powder and chia seeds (it always makes me think of Sarah– protein! fiber!) I added pumpkin pie spice, salt, stevia for sweetness, and toasted pecans. This bowl was post-long run fuel and it totally hit the spot.

Reading-wise, I finished this book:

I love the title- The Enigma of Room 622.

It was… pretty good. The premise is a book within a book. A writer is staying in a hotel where an unsolved murder occurred fifteen years ago, and decides to investigate. The story of the murder is the book he writes. So, there are multiple timelines- one of my pet peeves- but I forgave it in this case. This book was entertaining and the mystery was mysterious, if a little convoluted. You know how sometimes you finish a book and you just loved it so much, you’re sad that it ended? And then sometimes you finish a perfectly fine book and you’re kind of relieved to move on to the next thing? This was the latter experience.

Next up:

Prophet

I have VERY high hopes for this one! All I know is that it’s a sci fi mystery, and I don’t want to find out anything else. I’ve barely started it, but here’s the quote at the beginning:

The ultimate hidden truth of the world is that it is something we make and could just as easily make differently.

–David Graeber

I don’t know who David Graeber is, but I love that quote, and it’s making me think this will be a good one.

  1. I’m reading my IRL book club book (Klara and the Sun) and desperately need to get started on The Joy Luck Club for CBBC.

    I am in the middle of the new Robert Galbraith, but it’s kind of boring, so I don’t know if I’ll be able to finish it before it’s due back at the library!

  2. Oooh, the enchiladas sound really good! I like that they have a black bean sauce instead of the traditional red sauce. My cooking gets kinda boring over the summer because I don’t want to spend a lot of time in a hot kitchen but I’m hoping to make more cozy dinners this fall as it cools down. I’m really in the mood for some chili and cornbread right now!

    1. Yes, I want chili too!!! I have to admit my husband made the enchiladas- I wouldn’t have been in the mood to cook in a hot kitchen either.

  3. your oatmeal bowl looks amazing! i love adding pumpkin to my oat too. I also add flaxmeal and protein powder to boost nutrients. I like topping it with frozen berries and almond butter.
    i’m trying to read culpability but it’s being slow as I’m traveling for work this week.

    1. i have to start Joy Luck! I’m in the middle of Prophet now, but I’ll take a break to read the first section of JL.
      My husband makes his oatmeal like yours- peanut butter and berries.

  4. The enchies sound good! I’m boring with oatmeal. I top it with a little bit of brown sugar.

    Reading wise I finished the first section of Joy Luck, and I started American Dirt. Both are good!

    1. I’m glad everyone’s like Joy Luck Club. I have to reluctantly take a break from Prophet to get the first section of that read before Monday.

  5. I was team dried cranberries in my oatmeal forever, but when I quit sugar I started just doing fresh berries and I love it. When I was really young, like newly married and when the kids were tiny – I put brown sugar in my oatmeal every day.

    I’m reading the Joy Luck Club. I just finished Heartwood and I really enjoyed that one.

  6. My IRL book right now is Joy Luck Club, for CBBC, obviously. I read it decades ago, when it came out, and have forgotten most of the detail, but not the tragedies involved. Those have stuck with me. Did you see the movie? Really good also.

    That quote is amazing and so true. Sigh.

    My go to for oatmeal is actually cream of barley. I whip a banana in while it’s cooking, and it pretty much disappears. Then I mix in some nuts, fresh berries, and for sweetness a bit of raspberry jam. I’ve never tried pumpkin, but that sounds pretty good too. I’m late to the protein powder bandwagon, but I will put a scoop of that in there too.

  7. Ooo, I’m liking the idea of this post, haha. I’ve been meaning to get back into cooking, so maybe if I couple it with a book I’ve read, I’ll finally starting blogging more again! 😛

    Those enchiladas sound really good! I like throwing in fresh fruit for my oatmeal. :]
