The Second Day of Christmas

AHHH! I think this is the first time I haven’t been depressed on Boxing Day. I had a really nice day! It started with a run, and then I plopped down on the couch with my “fa la la” quilt and book.

Doesn’t get much better than this…
Oh wait- yes it does.
GAAH! Best day ever!!!

And we made a pie!

It’s the apple cranberry pie from Sally’s Baking Addiction. Boy, it’s hard to make a pie come out right. It looks a little wonky, but the family reported that it tastes good.

It was absolutely the best Boxing Day I’ve ever had. Tomorrow I have to work, but only in the morning. We have more fun planned for the evening!

    1. Oh thank you! I don’t know though… I think if I bought a pie at a bakery I would want it to look a little better than that.

  2. Double cat cuddle FTW!!! It does not get any better than that.

    PIes are tricky. I feel like there’s always a spot where the edge gets a little too brown, and my normal downfall is crushing the crust when I take it out of the oven. But regardless, we never have any leftover pie so I’m doing something right.

    1. Yes, the pies I make always seem to taste good- it’s just that they look odd. But that’s what happens when you only make a pie once or twice a year.

  3. Such a great way to spend the second day of Christmas! I love that your cats both came to snuggle with you!

    I don’t think I’ve ever tried making a pie, they seem more finicky than some other baked goods.

    I buy the Pillsbury or betty crocket crust and so it comes out ok.

    1. Yes, I’ve suggested buying a crust before but my family always wants homemade (grr.) I’m sure the store bought ones taste just as good!

    We drove to my parents on the 26th. The day was not the best… I will leave it at that so as not to vent in your comments. We were supposed to stay until tomorrow but are going back tonight because we are getting a massive winter storm.

    1. Oooh… I’m imagining all the things that could have gone wrong. I was thinking kid stuff but I just read your text!!! Well- holidays are hard.Glad you drove back and missed the storm at least.

  6. I haven’t had an apple cranberry pie in AGES and wow, they are so good. I’m glad you made it and enjoyed it. Why should it look like it came from a bakery? It didn’t, it’s homemade and made with love.

    I’m so glad you weren’t blue after Christmas. I know a lot of folks have these feelings, but wow, this is my favorite week of the year. Quiet and homey and low stress but still holiday adjacent. I love it.

  7. Jenny, after feeling fairly light and bright last year between Christmas and New Year, this time it has been hitting me hard, so I am SO delighted to read that you’re feeling light and bright. I know we both struggle with post-Christmas blues. It really is a bit a letdown, and the best way for an easy letdown is to enjoy a good book, warm snuggles, and NAP. All the gold stars for putting together a perfect antidote for the big feelings that can come after the holidays.

  8. Reading with TWO cats snoozing on you? That is the best life! The girls will sleep next to me but never ON me, and I keep warning them that I’m just going to adopt a cat who WILL snooze on my lap.

    I have never made pie, can you believe it? I am so intimidated!
