5 Things I Did on Sunday

I made pancakes!

I used this recipe for vegan buckwheat pumpkin pancakes. The recipe called for 1/4 cup of maple syrup, and I just left it out. I would imagine they taste quite a bit better with it, but I enjoyed my pancakes anyway! I didn’t take a photo, but here’s a photo from the website:

Presumably what they would look like if you use all the ingredients- mine were a little misshapen.

I sat in Starbucks and planned out the week.

Sometimes you just need to get out of the house… know what I mean?

Wait- what’s in that thermos?

I like to bring my own peppermint mocha creamer (vegan and sugar free) and add it to an English Breakfast tea. It’s my version of a fancy holiday drink! Yes, I know that’s a little weird.

I did a lower body strength workout AND yoga.

Woohoo! Every week I say I’m going to do yoga every day, and it doesn’t happen. Maybe this will finally be the week.

I watched lots of football.

SO many good games, including a Dolphins win in overtime. To be clear, I didn’t sit and watch four entire football games- but when I was home, I had a game on in the background- which felt very Sunday-ish.

I made enchiladas!

I used this recipe for sweet potato black bean enchiladas from Nora Cooks. I added crumbled tofu to the filling, along with extra spices, salt, and some cayenne. They were so good- but the thing that put this recipe over the top is the avocado crema. Avocados, yogurt, lime juice, cilantro, and salt… SO delicious! Get ready for a terrible photo.

I really don’t know how to make things look good, do I?

Nora put her crema in a piping bag and piped it beautifully onto the enchiladas, but I just glopped it on. Oh, and I was the only one eating these- my husband was working and my daughter had a flute section “Friendsgiving” tonight. That’s okay- guess what we’re having tomorrow? (Yay! No cooking on Monday!)

  1. I also did a “five things I did today” post! We’re twinsies! I have to say, I don’t know how you watch so much football. I really could not care less about football. Please don’t hate me! I don’t really watch any sports, if that softens the blow, but I will say that I find football to be incredibly boring. Almost as boring as baseball! Okay I’ll stop now. I’m just making enemies at this point.

  2. I’ve never made enchiladas, do they keep week in the fridge or freezer?
    Buckwheat pancakes sound lovely! I need to find buckwheat flour first.

    1. You could freeze these enchiladas (without the avocado crema- I would put that on right before serving.) They would keep several days in the fridge as well, but we’ll probably finish them tonight.

  3. Those enchiladas sound great! I should make them sometime soon. I love sweet potatoes! I made an Asian noodle dish last night that it so putzy but so good. I was glad I chopped all the veggies for it the day before to cut down on prep time a little bit.

    I relaxed after lunch and napped/read. Otherwise it was a pretty on the go day for us, which is so typical for this stage of life.

  4. Those enchiladas don’t look bad to me! I love good like that; it’s comforting, and it makes for great leftovers! Sunday I hung out with friends, went for a hike, and had a wonderful Indian food dinner!

    1. Yes, enchiladas are comfort food- and all ethnic food tasted better the second day, so I’m excited to eat them again tonight.

  5. The enchiladas sound really good, even if they don’t look photogenic! My food doesn’t usually look great either but I’m not a food blogger so it doesn’t matter — I just want it to taste good. I made vegan scampi last night and now I have lunch for work for a few days!

    My Sunday was a mix of being productive and relaxing, but the best part was putting up my Christmas tree. Now I can look forward to coming home in the evening and enjoying it!

    1. I’m getting envious of all these people with their trees up! We have to wait till next week when my son is home. Plus, we get a real tree, and you can’t get those too early- it has to still look good by Christmas! I think at some point we’ll switch to artificial, and then I can get it up as early as I want.

  6. I think just about any meal I don’t have to prepare looks delicious so I would eat those enchiladas in a heartbeat; I think they look very yummy.

    My Sunday flew by and I felt a bit disoriented by it all. We had church, which means we are gone from 9 am – 1 pm (and getting ready to go before that). Then after lunch I took a nap but didn’t set a timer and it was 4:25 pm when I woke up which was…EEKS!! I did make a soup for Monday’s supper, but other than that I felt like my whole day vanished.

    1. Yes, that does sound like a day that sped by! Well- you probably really needed that nap. And you made dinner for tonight, so that’s a win right there.

    I was going to go hiking and then stop by the store to make us a nice dinner, but after the hike I didn’t feel like going to the store so I sweet talked the Hubs into Chipotle for dinner. I’ll take care of grocery shopping & cooking this afternoon.

    those pancakes remind me of a pumpkin pancake recipe we used to eat all the time from Run Fast Eat Slow. I need to bring that back into rotation!

  9. Jenny, I did SO MUCH this weekend. There was NO relaxation time.

    One of my friends has cancer, so I cooked dinner to take over to her family tonight. This dinner was a pumpkin bean “chili,” a green bean salad, and chocolate chip cookies. For my own household I made a chickpea curry for dinner and apple crisp. I also made all my lunches for the week. THEN I ground (grinded? I REFUSE TO LOOK IT UP) the dog’s nails and took her for a bath. Then I cleaned out both our cars. Then it was time for bed. NO RELAXING. What sort of weekend is that?

    I have strong anti-adult feelings right now.

  10. Hey, we have that same thermos. We still use thermoses to bring dinner to basketball games, etc. My version of ‘fast food.’ Ha. I’m laughing at your avocado drizzled over the food. I’m less about presentation and more about Good Eats, so if it was good- hooray. My Sunday was all about getting ahead on blogs and finalizing Curly’s yearbook ad. I refused to go to bed until I’d written a few lines of my Christmas poem. Check. Once I start it, I think in rhyme and jot down ideas nonstop till done, so getting the document started is a big step.

  11. Yum, avocado crema! Those enchiladas sound delicious! I love that you bring your own creamer with you to Starbucks. I have been known to carry a bottle of my own hot sauce with me to certain restaurants, so I get it. Sometimes you want what you want! Good yoga start to the week!
